How to cook pigeons with green peas

Ingredients for 4 people:

  • 2 pigeons
  • 125 g not fat belly,
  • 1 tbsp. a spoonful of flour,
  • 200ml broth,
  • 45 g butter,
  • 10 small bulbs,
  • 400-500g of green peas,
  • thyme,
  • bay leaf
  • salt, ground black pepper.


Cut the bacon into pieces, boil for 5 min. and filter. Melt the butter and fry the brisket over low heat before it turns brown. In the same butter, fry the onions to a golden hue, and remove from the pan. We take pigeons and lightly fry in a pan, without closing the lid, and often overturn. When they are fried, spread on a dish.

Add flour to the pan, and stir well, pour the broth, leave to simmer for 2-3 minutes, pepper. In the sauce again put the pigeons, bacon and onions, add the green peas, bay leaf and a little thyme, salt. Close the lid and give to languish for 30 minutes.

How to cook a pigeon sauce


For 4 pigeons:

  • 65 g butter,
  • 60 grams of cheese
  • 1 tbsp. a spoon
  • margarine and salt.

For flour sauce:

  • 60 g flour,
  • 1 liter of broth,
  • 1 tbsp. spoon of lemon juice,
  • 50 ml of wine,
  • 80 grams of mushrooms,
  • and spices.


We divide the fried pigeons into portions and put them on a baking sheet greased with cold margarine. Make flour sauce, add to taste all the ingredients. Pour pigeons with sauce, sprinkle with grated cheese and melted butter on top. Bake in the oven until an appetizing golden brown crust is formed.
